About this deal

Melting cheese in the microwave is less consistent and less reliable, but if you’re in a pinch, start by bringing grated cheese to room temperature first. Carr's Cheese Melts are deliciously crisp wheaten biscuits with a mouthwatering light and melting texture, baked using our unique recipe for your special moments. Process cheeses, including "American" cheese, are cheese products designed to be extremely meltable and nearly impossible to break.

Italian Asiago comes in two varieties: pressato or fresco (young, smooth, and firm, with a mild appeal); and d'allevo or vecchio (aged, dry, and Parmesan-like). Certain cheeses melt more readily or to a greater degree than others, depending on their respective fat contents. This type of pan will keep stray, sticky strands of cheese from sticking to the sides and make it less likely for your cheese to burn. You will find anything from a light snack to a hearty meal, which can please both those who have a savoury or a sweet tooth! Add the shredded cheese to your sauce and turn the heat on the stove to the lowest setting – you want to melt low and slow! While the aged version is an ideal grater, for a smooth melt, seek out pressato—our recipe for Risotto with Peas, Marjoram, and Asiago is a scrumptious starting point.

Even this year, with its limitations people are still looking for ways to entertain their close family. Information and statements about products are not intended to be used to diagnose, treat, cure, or prevent any disease or health condition. For my cheese melts I used a mixture of pecorino, mozzarella, cheddar and blue cheese, simply because that was what I had in my fridge at the time, but you can use any cheese or combination that you like so long as the mixture can be pressed together to form balls. This cheese gained fame as a pizza topping—but, of course, we also love its melty goodness in everything from Roasted Vegetable Lasagne to Classic Paninis.

Working in batches of no more than three, carefully lower the cheese balls into the hot oil and keep moving until the panko coating is crispy and golden. Raise the temperature by another 40 to 90 degrees and all the bonds that joined your caseins together start to break, allowing the entire protein structure to sag and stretch into an increasingly loosey goosey, lava-like puddle. In milk's liquid state, the micelles have a slight negative charge, which makes them repel each other, just like bumper cars. The general rule is to bake the dish until the cheese is bubbly and melted, which will vary based on the oven temperature and type of cheese being used. In cooler temperatures, that dairy fat remains a solid; let it warm to around 90°F and the fat reaches a liquid state and the cheese becomes more pliable—you may even notice some cheeses begin to bead with "sweat" if they're left out at room temperature. The fat quotient is a big factor, too, while acidity and age also play major roles (younger cheeses are oftentimes better melters).

Remember to check the cheese at the lower end of the cooking time noted in the recipe to avoid burning the cheese. By melting cheddar cheese on the stovetop, you have more control over the process and can better avoid these issues. Adding acid, like the tartaric acid you'll find in a tart white wine, can also help prevent the cheese's casein proteins from clumping together and turning stringy, like in a classic fondue (our recipe uses a touch of starch for further protection from breaking). In my kitchen you can find Maltese traditional recipes, others inspired by my travels and also original easy-to-make ones.
