Just wanted to let you know this is NOT a nut free recipe…coconut is a treenut…we have a both dairy and tree nut allergies in our house…yea! While we have taken care in preparing this summary and believe it to be accurate, it is not a substitute for reading the product packaging and label prior to use. And because it’s made from cow’s milk, our products are a natural source of nutrients, such as calcium, protein and vitamins B2 and B12. This works great with the So Delicious brand but I also tried this with coconut milk from a can that was chilled and it turned out grainy.

Hi Neva, it really depends on the quality of the coconut milk / coconut cream you used more than the recipe itself. I have to add this note because there have been some dreadful batches of coconut milk in circulation lately.

Scoop ¾ cup of the solid coconut cream from the top of the can and put it in the chilled small mixing bowl. I’m guessing that they have way too much guar gum (or other stabilizer/binder in them), because they clump up when you try to blend them. Whisk or beat the coconut cream with your hand mixer (with chilled beaters) until it is smooth and slightly fluffy, about 1 minute. Open it up and scoop out the denser portion that rose to the top to use as your heavy cream substitute, saving the watery liquid left underneath to repurpose later. The mixture won’t take well to whipping, so don’t expect stiff peaks (or any peaks for that matter). I think the alcohol in the extract may prevent it from fluffing so I added it at the very end, whipped it for another 10 seconds to incorporate it and it was perfect. Not a significant source of trans fat, cholesterol, dietary fiber, vitamin D, calcium, iron and potassium.

That said, I’ve served it to many people who eat dairy and none have really remarked that it tastes like coconut.

Remove from the heat and pour into a muslin cloth, nut milk bag or very thin, clean and unprinted/coloured tea towel over a sieve. Coconut is actually not a tree nut (it’s a drupe) and studies have shown no correlation between tree nut and coconut allergies. It’s also shelf-stable, so keep a can in the cupboard and you’ll never be too far from whipped coconut cream. It can work nearly as well for bringing creamy texture and flavor to sauces, soups and stews, mashed potatoes, quiches, and casseroles.
